Cheeseburger Stuffed Peppers

Cheeseburger Stuffed Peppers

 

Ingredients

  • 1 pound
    Ground Beef
  • 1 medium
    Onion
  • 2 cloves
    Garlic (minced)
  • 2 red or yellow
    Bell Peppers
  • 1 cup
    Grated cheddar cheese
  • lettuce
  • tomato
  • pickles
  • ketchup

Cooking Directions

  1. brown ground meat in a fry pan with garlic and onion until cooked through.
  2. Slice peppers in half and de seed.
  3. Fill pepper half with beef and cook in oven at 375 degrees for 20 minutes.
  4. Remove from oven and sprinkle cheese on top.
  5. Place back in the oven until cheese is melted.
  6. Remove from oven and top with lettuce, tomato, pickles and ketchup.

Red white and Blue Sangria recipe

Ingredients

  • 1 Bottle dry white wine
  • 1 Bottle sparkling wine
  • 1 Cup(s) Apple juice
  • 2 Cup(s) Blueberries
  • 1 Cup(s) Strawberries, sliced
  • 1 Cup(s) Raspberries
  • 3 – 4 Granny Smith apples, cut into star shapes (use a small, metal cookie cutter

 

perfectly with le Cadeau Semi-Seco and Brut Sparkling Wine.

DIRECTIONS:

1. Stir together all ingredients except sparkling wine, apples and ice.

2. Cover and chill for at least two hours.

3. Stir in the sparkling wine, apples and ice just before serving. Please note, the longer the sangria chills, the more red it will be. Cut and mix in the apples last to keep them white

Salted Caramel Dipped Grapes

 

These salted caramel dipped grapes are fun and elegant at the same time. Could be a great addition to your family bbq or for a more formal cocktail party. Whatever your event these are a crowd pleaser.

Ingredients

  • 1 Pound(s) Cotton Candy® grapes (about 40 to 50 grapes) washed and dried
  • 1 Package (11 ounces) caramels, unwrapped
  • 2 Tablespoon(s) Heavy cream
  • McCormick® Sea Salt Grinder (set to coarse setting

This delicious recipe for Salted Caramel Dipped Grapes pairs perfectly with the le Cadeau Semi-Seco Sparkling.

DIRECTIONS:

1. Spear each grape with a toothpick. Set aside.

2. Microwave caramels and cream in small microwavable bowl on HIGH 2 minutes or until caramels are completely melted, stirring after every 30 seconds.

3. Dip each grape into melted caramel, allowing excess caramel to drip off. Place grapes on wax paper-lined tray. Sprinkle lightly with sea salt grinder. Refrigerate until caramel is set.

Ingredients

  • 12 Ounce(s) Firm white fish fillets, cut into chunks
  • 1 Tablespoon(s) Thai Kitchen® Red Curry Paste
  • 1 Egg
  • 8 Green beans, thinly sliced
  • 4 Green onions, green parts only, thinly sliced
  • 3 Cloves garlic, finely chopped
  • 2 Tablespoon(s) Thai Kitchen® Premium Fish Sauce
  • 1 1/2 Tablespoon(s)Cornstarch
  • 1 Teaspoon(s) Sugar
  • 2 Tablespoon(s) Vegetable oil
  • Thai Kitchen® Sweet Red Chili Sauce

DIRECTIONS:

1. Place fish, curry paste and egg in food processor; cover. Process until smooth. Set aside. Mix green beans, green onions and garlic in large bowl. Add fish sauce, cornstarch and sugar; stir to make a smooth paste. Add fish mixture; mix well. With lightly moistened hands, divide fish mixture into 1/4 cup portions and shape into thin patties.

2. Heat a wok or heavy skillet on medium-high heat; add oil. Fry patties in batches until golden brown on each side. (Do not overcook.) Drain on paper towels.

3. Serve warm or cold with Thai Kitchen Sweet Red Chili Sauce for dipping.

Homemade Doggy Ice Cream

 

Easy Homemade Doggy Ice Cream Treats

Ingredients

  • 1 or 2
    Ripe Bananas
  • 1/3 Cup
    Peanut Butter
  • 8 oz.
    Plain Greek Yogurt
  • 6
    milk bone biscuits (optional)

Cooking Directions

  1. Peel Bananas and break into small chunks.
  2. Using a food processor, mixer or blender, mix yogurt, peanut butter and bananas together until Smooth.
  3. spoon into ice cube trays.
  4. Break the milk bones in half and insert them into each ice cube square.
  5. Freeze in freezer for 2 to 2.5 hours.
  6. Pop out one cube at a time and let your pups enjoy.

NOTE: Please make sure your Peanut Butter does not contain any artificial sweeteners, especially xylitol, as it is very poisonous to dogs.

Godiva Triple Chocolate Strawberry No Bake Dessert

Easy No Bake Dessert for summer events

Its Summer Time and the weather is heating up. As Much as I love baking, having the oven on during the warmer days can be unbearable. (Especially since we do not have air conditioning). This decadent and Easy No Bake Dessert is absolutely a favorite summer dish in our house and is great to bring to summer family gatherings because it makes a HUGE amount for a small price tag.

This no Bake dessert features three layers of Godiva pudding in white chocolate, milk chocolate and dark chocolate. It also has fresh sliced strawberries and homemade whip cream on each layer.

 

Ingredients Needed:

1 box Godiva White chocolate pudding mix

1 box Godiva milk chocolate pudding mix

1 box Godiva dark chocolate pudding mix

1 box of Nilla Wafers

6 cups of milk

2 pints whipping cream

2 tablespoons powdered Sugar

1 large crate of strawberries

1 extra large bowl or deep pan

 

Easy No Bake Directions:

Step 1: line the bowl or pan with a single layer of Nilla wafers

Step 2: Mix the White chocolate pudding mix in a separate bowl according to the box directions. Immediately and gently pour the pudding on top of the wafers and refrigerate 5 minutes.

Step 3: while the pudding is chilling. Whip the whipping cream with an electric mixer until light and fluffy. Add in powdered sugar and whip until completely blended and fluffy.

Step 4: Slice strawberries into this slices and layer on top in a single layer on the pudding. Then carefully spread a thin layer of the whipped cream on top of the strawberries.

Step 5: repeat layering with the milk chocolate and dark chocolate pudding. Refrigerate the pudding layers for 5 minutes each before adding on the strawberries and whip cream.

Step 5: After the last layer of pudding add sliced strawberries and a top layer of whipped cream. Decorate with chocolates and strawberries as desired.  Refrigerate for at least 2 hours. Scoop into bowls to serve.

 

 

Variations:

Quicker:  Use pre made cool whip topping instead of making your own whip cream

Healthier/ Less Sugar: Use Sugar free pudding mix and Sugar free Cool Whip toppings.

Pork Stir Fry ($.94 per serving)

We are trying to stick to a $500 a month Budget for our family of four. You can read more about our budget plan in my post Feeding a Family of 4 on $500 a Month.

Cheap and Easy Stir Fry Pork

Pork Loin (1 pound) $2.22

2 cup White rice (uncooked measure) ($.50)

1 Bag Frozen Snap Peas ($.99)

1 red Pepper ($.53)

1 /2 onion ($.08)

2  cloves Garlic ($.08)

1 table spoon olive oil ($.10)

1/2 jar Hoi Sauce ($1.15)

 

Total Cost $ 5.64

This made Enough for all four of us for dinner and for 2 servings of leftovers for mike and I for lunch the next day.  Which makes it $.94 per serving.

We bought the Hoison sauce at Super Walmart. But it may be cheaper to make your own if you have the ingredients in your kitchen . There is a really easy recipe Here.

We bought the pork roast on sale for 50% off at Stop and shop for a total of $4.44 for a two pound pack of pork loin. The pack contained two 1 lb. loins. This made each loin only $2.22.

We buy a 50 lb. bag of rice from the Asian market making each cup of uncooked rice only $.25. We store it in a sealed tupperware tub in the basemen pantry and it last forever. If the apocalypse happens we will have enough rice for awhile..lol.

Cut the pork loin into 1 inch slices and marinate in a zip lock bag with about 1/4 the jar of Hoison sauce for at least 4 hours, all day while you go to work , or overnight is great too.

Directions for Making Cheap and Easy Stir Fry Pork

In a large wok. Saute pork slices until cooked all the way through and inside is no longer pink. Remove from wok.

 

 

Add into hot walk, chopped onion (How to Dice An onion,)chopped pepper, and chopped garlic. Saute until onions are translucent. Add in frozen snap peas and the other 1/4 of the Hoison sauce. Heat until frozen vegetables are hot. You can add the pork back into the wok and toss for a few minutes to warm it back up.

Cook rice however you normally cook your rice. We use our pressure cooker because it is quicker. We added a little parsley  to the rice and some seasame seeds just because we had some in our pantry. They make nice garnish for the pictures. But not nessissary for the recipe.

 

Plate and Enjoy!

We stored the leftover servings in a sealed container in the refrigerate and microwaved it the next day  at work for lunch for Mike and myself.
