Garden Salad with Garlic Grilled Chicken

This delicious and light  dinner was a perfect way to end a hot and steamy 95 degrees fourth of July. The vegetables for the salad came straight out of our garden which is out of control right now.  We cooked the chicken on the gas grill , which was perfect for a hot day because it doesn’t heat up the house and cooks pretty quickly.

Salad Ingredients:

Kale

Butter lettuce

tomatoes

Carrots

fresh basil

fresh scallions

chopped

white onion

Chopped avocado

Grated fresh Parmesan cheese

Hard boiled eggs

Garlic Parmesan Italian dressing

Mix all ingredients in a bowl and serve.

Chicken was rubbed with a garlic spice rub from Aldis and some olive oil and grilled on a gas grill until cooked through. Simple and easy.

We paired this with a light crisp chilled white wine and it was the perfect refreshment on a hot summer evening.
